The 2011 harvest is in full swing at Hidden Valley. What a whirlwind harvest it has been! It is remarkable to see the course a wine takes, from harvesting to bottling, and how it is influenced by weather patterns during flowering as well as during ripening. Despite it being a challenging harvest, the quality of the grapes this harvest has been outstanding.

Recipe from Overture restaurant

Chocolate Torte

Ingredients
• 400g chipped chocolate
• 300g butter
• 50g sugar
• 5 eggs
• 4 yolks
Method:
• Melt chocolate and butter together
• Whisk eggs, yolks and sugar together till ribbon stage
• Fold chocolate into eggs
• Pour into mould and allow to set
• Bake at 120 degrees for about ten minutes
